I had a lot of requests for this recipe when I posted the pic in my stories the other night. This recipe was passed on to me from my friend, Jilly, over the Summer and has been on repeat almost weekly! I love to make this on a Sunday and have for lunch a few days during the week. I have also added zucchini squash to this and it was great!
WHAT YOU NEED
1 tbsp olive oil
1 red pepper diced
1 orange pepper diced
1 sweet onion diced
1 bag baby spinach
Chicken (you can use 3 breasts cooked and chopped or for convenience I buy a rotisserie chicken and pull and shred all of the white meat)
Jar of pesto (I use the Alessi brand with pine nuts – you can find on the pasta sauce aisle in the grocery store) you can use half a jar if you want or the whole jar for more pesto flavor.
Quinoa (I use the boil in bag one and use 3 bags)
What to do :
Sauté diced onion and peppers in the tbsp of olive oil for 6 minutes. Add bag of spinach and stir until spinach is cooked down. Add in diced chicken and jar of pesto. Add in quinoa and mix together. Serve warm.
And that’s it! This is super easy and healthy and I make it almost weekly.
